What should I engrave?

The hardest part of engraving is often deciding what to engrave! The most common requests are names, dates, or years – perfect for marking a special person or life event. If you’d like something more custom, such as a logo, please contact us at info@roselli.fi.

Product description

The Roselli Small Fillet Knife is a precision tool designed for working with smaller fish such as trout and perch. With its compact 12 cm blade, it offers exceptional control and accuracy, making it ideal for delicate filleting, fine trimming, and detailed work close to bones and skin.

The blade is forged from Roselli’s Ultra High Carbon (UHC) steel, known for its exceptional sharpness and outstanding edge retention. Thanks to the hardness of the steel, the knife maintains its edge extremely well, but should be used with care and not struck against bones or other very hard materials.

The handle is crafted from beautifully stained curly birch and treated with linseed oil to provide a secure, natural grip, even in wet or slippery conditions. Each knife comes with a handcrafted sheath made from dark, vegetable-tanned Finnish leather, designed to protect the blade and age beautifully over time.

Handcrafted, sharpened, and perfected by hand in Harmoinen, Finland, every Small Fillet Knife is unique in appearance due to the natural variations in wood and steel.

For a complete setup, pair the Small Fillet Knife with Roselli’s Fish Fork, or choose the Big Fillet Knife when processing larger fish.

Roselli’s UHC steel provides an exceptionally sharp edge with outstanding edge retention. As the steel is extremely hard, use the knife with care – avoid striking bones or other very hard materials to keep the edge in top condition.

FAQs

What’s the difference between the Small Fillet Knife and the Big Fillet Knife?

The Small Fillet Knife has a shorter, narrower blade designed for smaller fish and fine, controlled work. The Big Fillet Knife is longer and better suited for processing larger fish (2–3 kg).

Which fillet knife should I choose for trout or perch?

For trout, perch, and other smaller fish, the Small Fillet Knife is usually the better choice thanks to its compact size and high precision.

Is the Small Fillet Knife suitable for kitchen use?

Yes. While designed for fishing, the Small Fillet Knife works very well in the kitchen for delicate fillet work and fine trimming tasks.

Why choose UHC (Ultra High Carbon) steel for a fillet knife?

UHC steel offers exceptional sharpness and excellent edge retention, making it ideal for precision filleting. Because the steel is very hard, basic care is recommended to maintain the edge.

Can the Small Fillet Knife be used in wet conditions or near water?

Yes. The curly birch handle provides a secure grip even in wet conditions. The carbon steel blade should always be cleaned and dried after use.
